Air Fryer Carrot Fries

Ingredients
- 4 1/2 teaspoons corn starch
- 1 1/2 teaspoons cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- 1 pound carrots, peeled and cut into 4-inch sticks (about 1/2-inch thick)
- 1 tablespoon finely chopped fresh parsley (optional)
Directions
- Mix corn starch, cinnamon, ginger, onion salt and pepper in small bowl until well blended.
- Place carrots in large bowl. Sprinkle with seasoning mixture; toss to coat.
- Spray air fryer basket with nonstick cooking spray.
- Preheat air fryer on 380°F for 3 minutes.
- Place carrots in air fryer basket in single layer, being careful not to overcrowd.
- Spray carrots lightly with nonstick cooking spray.
- Air fry 8 minutes. Shake basket to toss carrots. Air fry for 5 more minutes or until carrots are tender and lightly browned.
- Transfer to serving platter; keep warm.
- Repeat with remaining carrot mixture.
- To make Sriracha Greek Yogurt Dip: Mix ½ cup of Greek yogurt, 1 teaspoon lemon juice, salt, and pepper to taste, and 2 teaspoons of Sriracha sauce in a bowl and serve.
