Ingredients

  • 4 sweet potatoes, washed and pierced with a fork
  • 2 cups mini marshmallows
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup brown sugar, packed

Directions

  • Heat oven to 450 degrees.
  • Line a baking sheet with foil.
  • Place potatoes in a single layer onto the prepared baking sheet. Place into oven and bake for 45-50 minutes, or until soft and caramelizing.
  • In a small bowl, whisk together butter, brown sugar, cinnamon, vanilla and nutmeg.
  • Cut the potatoes down the center lengthwise. Top with butter mixture and marshmallows.
  • Place back in the oven for 2-4 minutes or until the marshmallows are golden and fluffy.
