Loaded Sweet Potato

Ingredients
- 4 sweet potatoes, washed and pierced with a fork
- 2 cups mini marshmallows
- 4 tablespoons unsalted butter, softened
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg
- 1/3 cup brown sugar, packed
Directions
- Heat oven to 450 degrees.
- Line a baking sheet with foil.
- Place potatoes in a single layer onto the prepared baking sheet. Place into oven and bake for 45-50 minutes, or until soft and caramelizing.
- In a small bowl, whisk together butter, brown sugar, cinnamon, vanilla and nutmeg.
- Cut the potatoes down the center lengthwise. Top with butter mixture and marshmallows.
- Place back in the oven for 2-4 minutes or until the marshmallows are golden and fluffy.
