Pumpkin Hummus

Ingredients
- 2/3 cup canned pumpkin (or half a 14oz can)
- 1 15oz can of garbanzo beans, rinsed and drained
- 1 ½ tbsp tahini
- 1 ½ tbsp lemon juice (or half of a lemon)
- 1 garlic clove
- ½ tsp sea salt
- ½ tsp ground cumin
Directions
- Add all the ingredients in blender and cover with the lid.
- Attach the pitcher to your bike blender blend slowly, while you or a friend tampers the ingredients back into the pitcher from the sides with the spoonula. After about 1-2 minutes of constant pedaling check the consistence. If you’re having trouble incorporating all the ingredients add a little more olive oil.
- Serve immediately or cover in a bowl and refrigerate for later enjoyment.
